What’s for dinner?
Just get a rotisserie chicken and try this recipe…
When I’m tired and don’t feel like cooking or making a big mess in the kitchen, this CRUNCHY PEANUT & CUCUMBER ROTISSERIE CHICKEN BOWL has become one of our favs! It’s so easy, so fresh, so delicious, so balanced!
We use a rotisserie chicken, but you could also make this with crumbled tempeh for a totally plant-based version.
Choose a rotisserie chicken:
– with a short, simple ingredient list (ideally just chicken, water, and salt).
– lower in sodium per serving (amounts can vary widely because many birds are injected with a salty solution).
– in plain or unseasoned varieties, and skip the skin to reduce added salt and saturated fat.

Do you have any recommendations about where to buy a rotisserie chicken that has these qualities you say to look for? The recipe looks great!
Thanks!
Laura
DJ Blatner, RDN says
Yes! Consumer Reports found the best rotisserie chickens are brands such as Whole Foods Organic, Kroger Simple Truth, and Wegmans Organic, since they have less sodium and fewer additives.

What is csulifliwer rice and where do you find it??
DJ Blatner, RDN says
“Cauliflower rice” is just cauliflower chopped up into super small pieces to look like rice! Super fun way to eat cauliflower! It’s sold in the frozen vegetable section. PS: Some people make their own by chopping up cauliflower, but I love the convenience of frozen!
