Ingredients
- 2 large eggplants, cut lengthwise into 1/4" slices (12 slices total)
- Cooking spray
- Sauce:
- 1 garlic clove, minced
- 1 Tablespoon olive oil
- 3 Tablespoons balsamic vinegar
- 1/4 cup chopped fresh basil
- 2 cups jarred roasted red peppers (packed in water), drained
- Filling:
- 1 container (14 ounce) firm tofu (not “silken”)
- 3 Tablespoons hot giardiniera
- 1/4 cup chopped fresh basil
- Topping
- 3/4 cup fresh grated parmesan cheese
Directions
- Pre-heat broiler.
- Mist eggplant slices with cooking spray and broil about 15 minutes (until golden), turning once.
- In food processor, puree garlic, oil, vinegar, basil and peppers until smooth.
- Mash tofu, giardiniera and basil with fork until ricotta cheese-like texture.
- Put 2 Tablespoons of tofu filling on the end of each eggplant slice, roll and place rolls in baking dish misted with oil spray.
- Top with red pepper sauce and parmesan cheese.
- Broil until cheese is golden and rolls are heated through.

It’s an Italian-American condiment. Very popular in Chicago! It’s a relish of pickled veggies. It’s sold in a jar, usually near the olives in the grocery store.

The tofu is the PROTEIN. So you can swap in any protein you’d like. Tofu is a great plant protein, choose organic. You can also use ricotta or cottage cheese. Or you can make a different, more meaty type of filling all together using cooked/smashed lentils, grassfed ground beef or ground organic chicken/turkey.
