Ingredients
- 1/3 cup chickpea flour (aka garbanzo bean flour)
- 1/3 cup water
- 1 teaspoon oil
- 1/8 teaspoon sea salt
- cooking spray
- Toppings:
- 1/4 cup marinara sauce
- 1/4 cup chopped fresh spinach
- 1/4 cup shredded mozzarella
- 1/4 cup quartered cherry tomatoes
- 1/8 teaspoon oregano
Directions
- Whisk flour, water, oil & salt together until smooth.
- Pour batter onto hot griddle misted with cooking spray.
- Heat each side for 4-5 minutes (until crust starts to brown).
- Flip crust once more and top with marinara sauce, spinach, cheese, tomato & oregano.
- Heat for 3 minutes or until cheese melts.
- OPTIONAL: Double up ingredients to make 2 personal 8” pizzas.

Okay, I made this today, and it was good, I’ve been searching for a decent pizza crust and here is one that is so simple and good. My fussy husband liked it, we could eat it out of hand. I duded pre-fried onions and peppers, and some cappiclli. I blasts the finished thing under the broiler for a few minutes to brown the cheese. Wheat free just got easier.

So good, and super filling! I used marinara, provolone/mozz mix, red onions, tomatoes, and a sprinkle of oregano, and I could only eat half of it!
I think next time I’ll crisp it up more, though – the browning scared me a bit so I pulled it early. It still tasted GREAT and I’d probably use it for a wrap at this level of done-ness, but definitely wish it had been crispier.
That’s my fault though! I didn’t cook it for the full time in the recipe.
I bet this would be GREAT with hummus…might have to take it to my next small group!!

I couldn’t find the garbanzo bean flour so I Red Mill bread mix. It says it is made with garbanzo bean flour, potato starch, corn starch, whole grain sorghum flour, tapioca flour, cane sugar, lava bean flour, xanthan gum, active dry yeast, potato flour, sea salt, guar gum, soy lecithin. Do you think this will be work?

Since garbanzo bean flour is the first ingredient in your mix, it should work great. If all else fails, amazon.com has Bob’s Red Mill products like the garbanzo bean flour that can be delivered to you. 😉 xx
