Ingredients
- 1 tablespoon avocado oil
- 2 cups frozen cauliflower rice
- 2 cups frozen brown rice
- 2 tablespoons coconut aminos
- 2 tablespoons fresh ginger, finely grated
- 1 tablespoon fresh garlic, minced
- 2 bunches kale, roughly chopped
- 4 eggs, soft scrambled
- 1 Tbsp green onions, chopped
- optional: sesame seeds, toasted sesame oil, sriracha
Directions
Heat oil in large skillet over med-high heat. Add cauliflower rice and brown rice and sautée until cooked through. Add coconut aminos, ginger, garlic, and kale. Cook for 2-3 minutes until kale begins to wilt and turns bright green. Soft scramble eggs in separate pan. Add 1-2 cups of 50/50 fried rice to plate, top with 1-2 eggs and garnish with chopped green onions. Optional: sprinkle on sesame seeds, a drizzle of toasted sesame oil, and/or sriracha.
