Ingredients
- 6 sprouted corn or grain free tortillas (pictured are almond flour tortillas)
- 1 can refried black beans
- 1 small white onion, chopped
- 3 cups fresh spinach
- 1/2 pint grape tomatoes, chopped
- 3/4 cup shredded Mexican cheese blend
- Mexican/taco seasoning
Directions
Heat oven to 375°. Place tortillas on a large sheet pan and bake for ~5 minutes until they begin to crisp up. Remove from oven and top each with beans, onions, spinach, tomatoes, shredded cheese, and seasoning. Return to oven and bake until cheese melts and begins to bubble, ~5 minutes.
