Ingredients
- 1 medium head cauliflower, trimmed and cut into small florets (about 6 cups)
- Dash sea salt
- Dash pepper
- Optional toppings: chives & quality sharp cheddar cheese
Directions
1) Place cauliflower florets in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes. 2) Place the cooked cauliflower in a food processor. 3) Add salt & pepper; pulse several times, then process until smooth and creamy. 4) Transfer to a serving bowl and garnish with chives & optional cheddar cheese sprinkles. Serve hot.

Anytime you cook a vegetable water-soluble vitamins such as vitamin C will get lost. I like to aim for 50% of my veggies each week to be fresh & 50% cooked. The worst enemies of veggies = long cooking times, super high heat, and water (like boiling). Microwaved veggies maintain lots of their nutrients because they get cooked so fast. Also fast steaming or sautéing are also good options.
