- 1 pound ground chicken
- 4 tablespoons harissa (hot chili pepper paste)
- 1 tablespoon avocado oil
- 2 cups cooked quinoa (or brown rice couscous)
- 2 cups warm cauliflower rice
- 1 cucumber, chopped
- 1/2 cup chopped red onion
- 8 Tbsp Hummus
- 1 Tbsp Dried dill
- 4 Tbsp Feta
- 1 medium Lemon
Mix chicken & harissa and form into 16 small meatballs. Place a large pan over high heat, add avocado oil. Once oil is hot, add the meatballs and cook for 15-18 minutes, or until cooked all the way through, making sure to turn the meatballs occasionally to brown all sides. Stir together cooked quinoa & warm cauliflower rice.
Make a pretty bowl with all the ingredients:
Add harissa meatballs, quinoa-cauliflower mix, cucumbers, red onion, hummus, dill, and feta. And squeeze lemon over the top.
