I have these baking in the toaster oven as I type this and they smell delicious! The batter was dry after adding the banana mixture with 1/2 c of liquid so I added close to 1/4 c extra liquid. I say liquid because I chose to use unsweetened vanilla flavored almond milk instead of water. I also tossed in 1/2 c chopped almonds too! Can’t wait to get these yummies in me belly! Thanks for a super easy and healthy recipe! ❤️

Oooh! Glad you tried them. YES! Anytime you add extra ingredients like chopped almonds, you will have to increase the liquid! Way to have fun w/ this recipe! xx

I’ve never used Buckwheat flour before and what a surprise it is! The muffins have a lovely dark blue hue and they smell almost flowery! Can this flour be used as a sub for wheat, or dare I say white flour, in most recipes?

Right??!!!??!!! BUCKWHEAT is a lovely surprise!!! It is NOT wheat and has NO GLUTEN so it won’t rise the same as white flour in recipes…but you can definitely swap out 50% white flour for it. xx

Does buckwheat flour have a lower GI than whole wheat flour? And if I omit the walnuts should I also add less water?

They are pretty similar in glycemic index, but Buckwheat is gluten-free for people who are trying to avoid it. You can keep the water the same if you remove walnuts. It’s just if you add anything you’ll have to increase the water. xx

Yes! Not very sweet, but satisfies that carby muffin craving! Ooooohhh! Yes! Buckwheat would be delish w/ blueberries!!! I haven’t tried them, but I’d still use the banana for sweetness & wetness of the batter and then add in the blueberries to the batter and on top. 😉
