Top any salad with this creamy and raw ranch-like dressing without adding any oil! For inspiration, toss together with romaine lettuce and halved grape tomatoes or use as a dip for veggies!

Ingredients
- 1 cup cashews
- 3/4 cup almost-boiling water
- 3 Tablespoons fresh lemon juice
- 1 Tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1/4 teaspoon dried dill
- 1/4 teaspoon dried oregano
- 1 teaspoon each sea salt & black pepper
- 2 Tablespoons finely chopped fresh chives
Directions
- In food processor or blender, puree dressing ingredients (except chives) for 3-4 minutes, until creamy. For best results, drizzle water in gradually as food processor/blender is running.
- Stir in chives.
- Drizzle dressing on salad of choice or store in refrigerator for up to 7 days.

Cashews make it super creamy & are my favorite for this recipe. Other nuts like walnuts & almonds work, but it’s not as creamy. You can also make it with tahini (sesame seed paste) or sunflower butter (no sugar added).

dried herbs ok in place of fresh ones? I just do not have access to them at the moment and won’t for awhile. Can’t wait to try this ranch recipe!

All the herbs in this recipe are DRIED, except for the chives. And yes, you can use dried chives. 2T fresh chives is about 2 teaspoons dried.

Has anyone tried replacing some of the cashews with white beans? If so, what proportions?
I’m guessing the flavor would be about the same but maybe less creamy.

Love this idea. I haven’t done it, but have made very creamy & delish dips (and protein pesto!) with white beans. I would guess 1/2 cashew + 1/2 white bean would be delish!
