I’m always looking for creative meals w/ TONS of VEGGIES since they are the ultimate superfood! And this meal is definitely packed w/ veggies & is inspired by my usual takeout order from the poké place near us.
Now, let’s talk about the tuna steak … it was easy to make & delish. Chris grilled it in a skillet & it was just 2 minutes of cooking on each side. Fast 🤯! Highly recommended, but you could swap to grilled chicken or shelled edamame for protein.

Ingredients
- 6 ounces seared tuna steak (marinate in ~3T coconut aminos for 15 mins before cooking)
- 3 cups mixed greens
- 1 cup cooked brown rice
- 1 cup sliced cucumber
- 1 cup shredded carrots
- 1/2 cup sliced radish
- 1 jalapeño, sliced
- 1/2 avocado, sliced
- 2 tablespoons avocado mayo
- 2 teaspoons sriracha
- 2 tablespoons chopped green onion
- 2 teaspoons sesame seeds (white or black)
Directions
Evenly split these ingredients into 2 bowls: Tuna, mixed greens, rice, cucumber, carrots, radish, jalapeno, and avocado.
Stir mayo w/ sriracha and drizzle on top.
Sprinkle w/ green onions & sesame seeds.
