Ingredients
- 2 organic eggs
- 1 teaspoon extra virgin olive oil
- 2 cups kale, chopped
- 1 clove garlic, minced
- 1/2 cup cooked quinoa
- 1/3 avocado, sliced
- sea salt
- cayenne pepper
- optional add-ins: quality sharp cheddar & hot sauce
Directions
1) Make eggs: In a small pan, over medium heat, scramble eggs in 1/2 teaspoon of olive oil. 2) Make sautéed garlic kale: In same pan, over medium heat, sauté kale in garlic and remaining 1/2 teaspoon of olive oil. 3) Assemble bowl: In a medium bowl, add kale and top with warm egg & quinoa. Top with avocado, salt & cayenne pepper.
NOTE: Swap quinoa for brown rice or roasted potatoes.
TIME SAVERS: Make lots of kale in advance & keep in fridge for breakfast all week OR use uncooked baby spinach in place of sautéed kale at bottom of bowl & it will wilt perfectly from the hot eggs & quinoa.

Scrambled tofu is delish in the superfood breakfast bowl. Just drain & press dry organic firm tofu. Then mash it w/ a fork until it’s scrambled egg texture. Add a little turmeric for a golden egg color. Also try “breakfast lentils”…saute cooked lentils w/ fennel seeds, sage & cayenne…it tastes like veggie breakfast sausage!

This is my go to breakfast dish which I cook & portion for my whole work week. I didn’t want to try Kale because I heard it’s bitter so I just swapped it out with spinach (I’m also not a fan of spinach but actually love it in this recipe & now in my salads). I tried & didn’t like avocado so I just swapped it out for mango. And Voila! A healthy, filling, breakfast that I don’t have to feel guilty about eating afterwards. Quinoa also comes in different flavors (who knew!) so I change the flavor up weekly. BTW, I never had quinoa before. You are getting me to try new foods & it’s tastes GOOD!

Bulgur is whole wheat kernels that are boiled, dried, cracked. It is a whole grain & that’s great! I prefer non-wheat grains only for variety sake…we have so much wheat in our diet…it’s nice to get quinoa or brown rice in the mix. xx

Swap in cooked brown rice instead, not couscous. Couscous is made from white, processed flour. PS: Couscous made from BROWN RICE is available so you can definitely use that, too.
