I’ve given the classic Shamrock Shake a superfood makeover. Cool. Creamy. Minty! With just 5 ingredients, this is faster than visiting a drive-thru window.
Servings: 2 Print Recipe
Ingredients
- 1 cup unsweetened vanilla almond milk
- 1 Tablespoon almond butter
- 1 banana, sliced & frozen
- 1/4 cup baby spinach
- 1/4 teaspoon pure peppermint extract (or 1/4 cup mint leaves)
- Optional: cacao nib garnish to make it mint-chocolate chip! Add ice if you like it thicker.
Directions
1. Place ingredients into a blender and puree until smooth. This recipe makes two 6-ounce shakes (3/4 cup each). The perfect size for a light after-dinner dessert.

A shamrock shake is classically MINTY, but you can try vanilla, cinnamon, unsweetened cocoa powder. My vanilla secret is GROUND whole vanilla beans: http://amzn.to/1PI0scE. I’m allergic to bananas, is there something I can substitute with that?

Banana adds 1) creaminess/thickness & 2) sweetness. So a swap for that would be 1/2 cup plain 2% Greek yogurt (creamy/thick) + 1 pitted medjool date (sweet).

Instead of adding the almond butter would I get the same benefit from adding hemp powder? I use the Manitoba Harvest Hemp Powder. Thanks

Sure you can swap almond butter for another type of nut/seed like hemp. Hemp hearts or the “Hemp Pro 50” from that brand are whole foods. Skip the hemp protein powders that are protein concentrates/not whole food.

This shake was absolutely delicious! I wish I had read the serving size first because I drank the whole thing but I can forgive myself for that! I have 2 questions: 1) Can the other serving be kept in the fridge if consumed within 24 hours? and 2) What ingredients could I add to make this a complete meal? It’s so refreshing and I love the mint! I could see myself having this everyday!!

I LOVE this shake, too! I don’t love how it tastes after sitting in the fridge for 24 hours, so instead make popsicles with the other half! The recipe is for a small dessert, but if you would like to have this as a meal…drink the whole thing and add 1 more tablespoon of almond butter for extra protein! xoxo
