Ingredients
1 medium to large sweetpotato (~1 cup mashed)
1 cup dark chocolate chips
Directions
- Wash sweetpotato, pierce with a fork 5 times, microwave for 5 to 8 minutes (flipping once midway), until tender.
- Put chocolate in microwave-safe bowl and microwave for 30 seconds, stir, and repeat until smooth.
- Add 1 cup cooked sweetpotato (no skin) and melted chocolate to a food processor or blender and puree until smooth.
- Form into 16 balls and refrigerate for 1 hour, to set the chocolate.
- Keep in the fridge in a covered container for up to 7 days.

What brand of chocolate morsels did you use? I used chopped up Ghirardelli bars–one was 70% the other was 72%. The fudgy candies are deeply chocolaty and very smooth, like a nice truffle. As I allow them to sit on a rack to air, they are very slowly establishing a little crust so I can transport them to friends.

I’m so glad you tried them! And LOVE that you shared them with friends!! So FUN! Using chocolate chips that are ~70% cocoa or more is great. I used Enjoy Life Dark Morsels (69% cocoa).

I made this and spead it on parchment paper about 1/2″ thick and when it got cold I cut it into squares. I shared it with friends at work and they are all making it fir their families! So fun.

Hi there. The dark chocolate chips help sweeten & SET the fudge, so a swap to just cocoa powder wouldn’t get you the same results. Hope you try this delish fudge! YUM!
