I aim to eat vegetables at every meal. Guess how I do it. Being LAZY!
Here are my favorite 5 LAZY VEGETABLES:
SIMPLE GREEN JUICE
Blend 1 cup cold water with 1 cup spinach or kale and a squeeze of lemon. If you want it a little sweeter, add 1/2 cup of fresh chopped green apple or 1/2 cup of frozen unsweetened berries! VEGGIE DIPPERS
Years ago, I was at a burger restaurant. The side options were the usuals of fries, house salad…and then I saw: “Veggie Dippers.” Man those sounded FUN, so I ordered them. It ended up being just a bunch of cut veggies & dip, but because of the fun name…I totally enjoyed them. I now serve “Veggie Dippers” regularly with lunch & dinner. Easy. Fun. Try it with cashew ranch dressing.
THE GREEN BASE

CRUNCHY CABBAGE SALAD
In a large bowl mix shredded cabbage, chopped green onion, sliced almonds, salt and pepper. Whisk apple cider vinegar, olive oil, and honey in a separate bowl and toss with cabbage mix. MASSAGED KALE SALAD
Massage chopped raw kale leaves, fresh lemon juice, olive oil, and sea salt with your hands. The lemon & massage make the typically tough kale leaves super tender & delish. Top it with your favorite chopped nuts or seeds. Make a big batch, lasts 5 days in the fridge. Great with BBQ Chicken + Cauliflower Mac & Cheese. PS: Massaged kale is even perfect for tossing into morning eggs.
