I started making & eating cauliflower rice years ago. Swapping regular rice to cauliflower rice is 10x lower in calories and adds a super dose of veggie nutrients. However, I fell out of love with it, not feeling like it was satisfying enough.
Recently, I ate it in a Mexican dish and got re-obsessed with it!
I’m officially a re-inspired cauliflower rice girl!
It fell off my menu rotation because I was being too boring and goodie-two-shoes with it. But now I remember by just sautéing it in a little avocado oil + adding flavors like chili power or cilantro & lime it becomes the perfect addition to a Mexican Fiesta with black beans, pico de gallo, romaine & guacamole.
Cauliflower Rice is super simple to make. Chop up a head of raw cauliflower into florets and pulse them in a food processor until it has the texture of rice. No time to make it yourself? You’re in luck! Cauli-rice has become SO trendy, grocery stores are selling it pre-chopped.

PS: Use cauli-rice instead of rice or quinoa in breakfast bowls, sushi & stir-fry’s.
