Farmer’s Market season is here…and man they’re a great place to get inspired to buy beautiful produce.
But inevitably you come home with a big bag of produce & don’t know what the heck you are going to do with all of it. #thestruggleisreal
>> Below are foolproof ways my hubs & I use farmer’s market produce. These aren’t ‘recipes’, but rather inspiration starting points. Any veggies you use will work! Trust Yo’ Self! <<
GRILL OR SAUTÉ ANY FARMER’S MARKET VEGGIES & MAKE…
1. Open-Faced Sandwich
Smear goat cheese on grilled sourdough bread and top with cooked veggies.
2. Pizza
Spread marinara on a sprouted whole grain pizza crust (like this) and top w/ cooked veggies & parmesan. Bake for 10 minutes.
3. Frittata
Beat eggs and mix with cooked veggies. Pour into an oven-safe skillet and cook over medium heat until set. Finish for a couple of minutes under the broiler. Top w/ fresh herbs & squeeze of lemon.
4. Pasta Bowl
Toss cooked veggies w/ cooked quinoa pasta (like this) & your favorite sauce. Try pesto, marinara, or fresh lemon & herbs.
5. Street Tacos
Fill sprouted whole grain corn tortillas (like this) w/ warm vegetarian refried beans & cooked veggies. Top w/ sliced avocado & pico de gallo.
BONUS: Got fruit? Make a Smoothie.
Blend any farmer’s market fruit with rolled oats, almond butter, your favorite milk & ice.
