Pumpkin Freezer Fudge
In a bowl mix:
1/4 c. melted coconut oil +
1/2 c. creamy almond butter +
1/2 c. canned unsweetened pumpkin puree +
1/4 tsp. pumpkin pie spice +
pinch of sea salt
Transfer the mix into a parchment-lined 5-6″ square container and use a spoon to spread out evenly. Note: I use a plastic or glass food storage container.
Place in freezer for 2 hours or until solid. Remove from freezer, pull up on the parchment, and you’ll have 1 big square of fudge. Use a sharp knife to cut into 16 small squares.
Keep in the freezer until you want one, because if left outside of the freezer they get melty. That’s why it’s called “freezer” fudge.
