Confession: I LOVE the crunchy broccoli salad loaded with MAYO & BACON from the whole foods market salad bar. Anyone else? BUT other than the broccoli, most of the ingredients are C.R.A.P. You know my food philosophy: Eat what you crave, just make it with better-for-you, superfood ingredients. Soooooo….I created a healthified copycat version to satisfy my craving with more nutrition. What makes it so much BETTER is the greek yogurt dressing. The little bit of milk fat in 2% yogurt contains something called CLA which may help exercisers build muscle/burn fat. Plus greek yogurt gives you a dose of protein, calcium, and gut-friendly probiotics. Better Broccoli Salad A quick VEGGIE HEAVY recipe that beats store-bought broccoli salad in both taste + nutrition. DIRECTIONS: 1) Steam broccoli. Lightly steam 6 cups of broccoli florets in microwave (2 mins) or on stovetop (4 mins). Don’t over steam, should still be slightly crunchy. Put in refrigerator and allow to cool for 15 minutes. 2) Make dressing. In a large bowl, mix together 1 cup plain 2% greek yogurt + 2 tablespoons raw unpasteurized apple cider vinegar + 1/2 teaspoon sea salt + 1/2 teaspoon black pepper. 3) Mix. To the bowl, add cooled broccoli and stir. Mix in 3 pieces cooked/crumbled, no-sugar, uncured turkey bacon* + 1/4 cup finely chopped red onion + 1/4 cup raisins. Nutrition Info (1 cup): 90 calories, 10g protein, 3g fiber, 0g added sugar *Vegetarian Swap: Swap bacon to 1/4 cup sunflower seeds How to Enjoy: This salad keeps in the fridge very well for up to 5 days. Make a batch for the week and it’s great to have as a snack, dinner side, or in a sprouted whole grain wrap for lunch. |
