Sweet Potato Toast. This is a FUN way to get more sweet potatoes into your life! Sweet Potato Toast = slices of roasted sweet potatoes that you can top w/ all sorts of goodies. You can buy frozen pre-roasted sweet potato toasts, but they aren’t in my usual grocery store. So I decided to just ROAST & FREEZE them myself. Now when I open my FREEZER… I have these pre-roasted slices that are super EASY to just heat & eat! ⚡️SWEET POTATO POWER⚡️ Sweet potatoes are a natural source of fiber, immune-boosting vitamin C, skin-enhancing vitamin A, and heart-healthy potassium. Sweet Potato Toast I LOVE sprouted whole grain toast but this is a fun, gluten-free, grain-free option to put in the rotation. MAKE ME… 1. Clean large sweet potatoes & chop off the ends. Leave the peel on! 2. Cut into 1/4-inch thick slices. 3. Roast in a single layer on a parchment-lined baking sheet at 350˚F for 15-20 minutes, flipping halfway through. 4. Cool completely. 5. Freeze in a single layer in gallon-size bags. HEAT ME… When you’re ready to eat, take a few out of the freezer and pop them right into your toaster until they are warm. Or put them in the microwave for 30ish seconds. TOP ME… Sweet potato toast is a blank canvas for fun flavor combos. Some versions I’ve been eating for breakfast: SAVORY refried black beans + guacamole spinach + egg SWEET almond butter + berries tahini + banana PRO-TIP: I also like to chop thawed sweet potato toasts & add them to lunch bowls and salads.
