Sweet Potato Toast = slices of roasted sweet potatoes that you can top w/ all sorts of goodies.
You can buy frozen pre-roasted sweet potato toasts, but they aren’t in my usual grocery store. So I decided to just ROAST & FREEZE them myself.
Now when I open my FREEZER… I have these pre-roasted slices that are super EASY to just heat & eat!
⚡️SWEET POTATO POWER⚡️
Sweet potatoes are a natural source of fiber, immune-boosting vitamin C, skin-enhancing vitamin A, and
Sweet Potato Toast I LOVE sprouted whole grain toast but this is a fun, gluten-free, grain-free option to put in the rotation.
1. Clean large sweet potatoes & chop off the ends. Leave the peel on!
2. Cut into 1/4-inch thick slices.
3. Roast in a single layer on a parchment-lined baking sheet at 350˚F for 15-20 minutes, flipping halfway
4. Cool completely.
5. Freeze in a single layer in gallon-size bags.
When you’re ready to eat, take a few out of the freezer and pop them right into your toaster until they are warm. Or put them in the microwave for 30ish seconds.
Sweet potato toast is a blank canvas for fun flavor combos. Some versions I’ve been eating for breakfast:
refried black beans + guacamole
spinach + egg
almond butter + berries
tahini + banana
PRO-TIP: I also like to chop thawed sweet potato toasts & add them to lunch bowls and salads.
