Most often, French toast is made from white bread—and frozen versions come with added C.R.A.P. like artificial dyes. Instead, make this SuperSwap French toast that includes a dose of morning veggies!! Any time I can work vegetables into breakfast it’s a win. Cinnamon, vanilla, coconut oil, and coconut flakes make this French toast subtly sweet without added sugar. If you like it better with a little maple syrup, use it!

- 3 organic eggs, beaten
- 1/2 cup unsweetened plant milk
- 2 teaspoons ground cinnamon or pumpkin pie spice
- 1 teaspoon pure vanilla extract
- 1 zucchini, grated (~1 cup)
- 4 slices sprouted whole-grain bread
- 2 teaspoons coconut oil
- 2 tablespoons chopped pecans
- 4 teaspoons unsweetened coconut flakes
- 4 teaspoons pure maple syrup (optional)
In a medium bowl, mix together the eggs, milk, cinnamon, and vanilla. Put the zucchini in another medium bowl.
Dip each slice of bread in the egg mixture, pressing it so it soaks up the liquid. Press both sides of the bread into the zucchini, using your fingers to pat about 1/4 cup onto each slice.
Brush a 12-inch skillet or a pancake griddle with coconut oil over medium-high heat. Add the bread and cook for about 3 minutes per side, until the egg is totally set and golden. Top with chopped pecans and coconut flakes. Serve with pure maple syrup, if desired.
One more thing... For a vegan swap replace the eggs and 1/2 cup plant milk with 3 tablespoons ground flaxseed, 1 tablespoon natural almond butter, and 1 cup plant milk. In a small bowl, stir together the flax, almond butter, and plant milk and let thicken for 10 minutes. Continue with the recipe as written.
Flavorize... Swap the zucchini (zucchini bread style) for 1 cup unsweetened canned pumpkin (pumpkin bread style), grated apples (apple pie style), or grated carrots (carrot cake style).
