Lunch fatigue for back-to-school and work is real. So here are my favorite 4 lazy lunch ideas that are easy, fun, and have balanced superfood nutrition to help you stay focused, energized, and satisfied through the day.
4 LAZY LUNCHES
Not only fun & easy to make, but also PLANT-BASED to nourish your cells
1. CHICKPEA CAESAR WRAP
sprouted whole grain wrap + smashed chickpeas + romaine/kale* and tomatoes + caesar dressing
Superfood Nutrition: Leafy greens like kale are magical so adding them into any and every meal is a smart idea. They keep your brain sharp for a productive afternoon.
2. PROTEIN PESTO SANDWICH
slice of sourdough + mashed white beans (think hummus) + arugula and tomatoes + pesto (stirred into the beans)
Superfood Nutrition: Sourdough bread may help keep blood sugar levels steady and white beans are a great source of gut-friendly, filling fiber.
3. QUINOA TACO BOWL
quinoa + black beans + romaine/kale* and peppers + guac/salsa
Superfood Nutrition: Guac is full of anti-inflammatory fats. Plus, studies suggest avo eaters are healthier than non-avo eaters.
4. LAZY SUSHI PLATE
nori topped w/ brown rice + smoked salmon + cucumber slices and carrots + spicy olive oil mayo
Superfood Nutrition: Nori (the seaweed used to make sushi) is delish and it’s a natural source of thyroid-supporting iodine.
