6 Quick Meal Ideas Using Superfood Chili…
1. Chili Breakfast Hash (veggie loaded hash, yes please)
Ingredients: chili + shredded sweet potato + shredded brussels sprouts + egg
How to: Sauté the sweet potato & brussels sprouts. Top w/ warm chili & a cooked egg.
2. Chili Burrito Bowl (love the mix of brown rice + cauliflower rice)
Ingredients: chili + brown rice + cauliflower rice + salsa/guacamole
How to: Warm the chili, brown rice, and cauliflower rice. Add to a bowl and top with salsa & guac. Optional: Add extra veggies like romaine & peppers.
3. Chili & Veggie Noodles (perfect mix of noodles + veggie noodles)
Ingredients: chili + quinoa noodles + zucchini noodles + plain greek yogurt
How to: Toss cooked noodles & warm zucchini noodles together. Top w/ warm chili and yogurt (it’s like sour cream). Optional: Top w/ jalapeños & cilantro.
4. Chili Nacho Salad (best fast lunch)
Ingredients: chili + tortilla chips + salad greens + avocado cubes
How to: Put a big pile of salad greens in a bowl and top w/ warm chili, tortilla chips, and avocado.
5. Chili Stuffed Peppers (classic, but w/ more superfoods)
Ingredients: chili + quinoa + bell peppers + cheddar cheese
How-to: Cut bell peppers in half, remove seeds, and stuff w/ cooked quinoa & chili. Top w/ cheddar cheese and broil for 6 minutes, until the cheese gets melty.
6. Chili Loaded Baked Fries (it’s a big salad on top of chili fries)
Ingredients: chili + baked potato wedges + shredded cabbage/radish/green onion + ranch dressing
How to: Top baked potato wedges with warm chili, cabbage, radish, and green onion. Drizzle w/ a ranch dressing made from olive, avocado, or high-oleic sunflower oil.
