My solution when I feel uninspired to meal prep & cook:
I GET LAZY, in a good way…
I’ve created lots of LAZY MEAL ideas that have:
✅ MINIMAL INGREDIENTS
✅ SIMPLE & QUICK PREP
✅ VERY LITTLE CLEAN UP
…and yet are still SUPER NUTRITIOUS!
3 LAZY BOWL MEAL IDEAS
…perfect for those extra busy or tired days
1. RANCH BOWL
protein: black beans
grain: sweet potato croutons*
veggies: romaine/tomatoes
fat topper: ranch dressing
*To make croutons, cut sweet potatoes into 1/4″ cubes, roast at 400F for 15-20 min, until golden.
2. COBB BOWL
protein: hard boiled egg
grain: quinoa
veggies: kale/cucumber
fat topper: blue cheese/lemon
3. THAI BOWL
protein: edamame
grain: brown rice
veggies: coleslaw mix/cilantro
fat topper: cashews/lime
PS: I usually like the protein/grain warmed & the veggies cold. But, you do you. 😎
